5 lbs of potatoes- boiled
1/2 doz eggs-boiled
1 bunch green onion- chopped
1 lb of lean bacon-(fried & crumbled)
1/2-3/4 jar Mayonnaise (30oz.jar)
2-4 tablespoon yellow mustard
salt & pepper to taste
Place the potatoes in medium saucepan and add enough water to cover by 1-inch.
Bring to boil over high heat and cook until the potatoes are just tender,about
15-25 minutes. Drain,cool then peel potatoes.
While potatoes are cooking , boil eggs in separate pot.
Cook bacon and crumble, chopped green onions.
Mix potatoes(cut in quarters), eggs,green onion, bacon,s&p,in large bowl.
Add mustard, and start by adding 1/2 jar mayo. Mix well. You can add more mayo
if needed.
Refrigerate the salad several hours before serving.

Skip the mustard. Too much vinegar. Go with mayo and mustard powder.

Secret ingredients that will put it over the edge are chopped crispy bacon bits, sliced green olives and parsley.

The best potato salad that I ever tasted in my life was from a coworker who is now deceased. She told me that her secret was that she boiled the potatoes in water with crab boil.

My dad has been making this for years, got it out of the Times Picayune years ago, it's tghe best I've ever had aside from my grandfather's and no one can duplicate his.
1. Cajun Potato Salad
2 tbls margarine
1 tbls mince garlic
1 bunch (5-6) stalks shallots, tops only
1 tbls liquid smoke
2 tbls Worcestershire
2 lbs bacon, fried and crumbled
5 lbs red potatoes boiled in crab boil, cut up
18 ounces mayo
12 eggs boiled, yolks separated, whites chopped
1 cup spicy Creole mustard
½ cup yellow mustard
2 tbls Tabasco
salt and pepper to taste
In med. Size skillet, melt margarine over medium heat. Add garlic and shallots; cook until wilted. Add liguid smoke and Worcestershire sauce. Cook for 15 minutes; cool. Add bacon and set aside.
Mix potatoes, mayo and egg whites in a three gallon bowl. In a separate bowl, mash egg yolks and mix with both mustards and Tabasco sauce. Combine mustard mixture and potatoes. Add bacon mixture then salt and pepper to taste.

Boil until fork tender
Remove the skins. I don't get mine completely skinned, just most of it
Add mayo and mustard to taste. I like a lot.
TONS of pickles ( to the no crunchy clan)
Couple dashes of Tabasco and salt and pepper to taste
