Pot Luck Holiday Dinner Ideas

With the holidays coming up, I know a lot of people will have company dinners. Some will be catered(nice but I think that takes some of the fun out of it) others will be pot luck. I've got a few recipes that I usually rotate out between Thanksgiving and Christmas dinners. I've done a simple corn casserole, sopapilla cheesecake bars, potato au gratin, sweet potato casserole, etc. I'm kind of tired of rotating these same recipes. What are some of you guys bringing to your company dinners?

I might be in the minority but I have no desire to eat anything cooked at a coworkers house and brought to work. Everything you listed sounds good, I would probably make a rice dressing because it's easy and I get a lot of compliments on it.

I do a pork roast in the crock pot or meatballs and little smokies.

I avoid pot lucks like they're the plague. A buffet of casseroles and dips people found on Pinterest? Nooope. I'm good.

I get where you’re coming from. I don’t eat at buffets because I simply don’t want to overeat. Plus most buffets aren’t that good anyway. However, when it comes to work related dinners it is nice to have everyone get together and forget about the job for a little while and have a meal together.

Maybe I’ve been lucky to work with excellent cooks, but I’ve had some delicious food at office potlucks. Doing one for thanksgiving next week....by the time I signed up to bring something, there were so many delicious options, I elected to bring a pineapple agua fresca.

We are doing pot luck this year.

I’m making filet kale nachos (a dish I made up myself):

Salt/pepper/oil kale leaves and roast in oven until crispy
Cook filet Mignon (or two) to med rare
Make béarnaise sauce
Slice steak very thin against the grain, put over the kale, sprinkle with sauce

Eggplant/shrimp/cheese casserole.

Stuffed Mirliton----I did 6 of them today with shrimp, the trinity, garlic, green onions, parsley, Italian bread crumbs and some parmesan cheese. Also some dry and wet seasonings I like to use.

Mac & Cheese using a few different cheeses in the recipe.

The ole stand-by shrimp mold.

Philly Cream Cheese, pepper jelly and crackers.

Assorted cheese tray.

Assorted fruit tray or vegetable tray with dip.

I like to do a Mississippi Roast in the crock pot and bring a pot of rice and rolls so people can make rice and gravy or roast beef sandwiches.

If I have extra time, I’ll do eggplant dirty rice and/or roasted Brussels sprouts.

Its not my favorite either. I'll partake, but it really backfired on me a couple years ago when a woman obviously smoked in her home and brought roasted vegetables (from frozen, so soggy) that tasted like licking an ashtray.

I don't work with coworkers, but lease out an office in a building where other companies also lease out offices. So we aren't actual coworkers and I don't know any of them at all.

I'm bringing boudin/pepper jack hand pies this year.
