Pot Luck for work on Friday

So my office decided it would be fun to have a pot luck this Friday for lunch.
I’m the only guy from LA, and a pretty solid cook, so I’d love to bring them something delicious. The problem is, we only have one microwave and a tiny toaster oven to heat things for an office of over 50 people.
Anybody have a go to recipe that requires minimal heating?

Seriously considering this. Just have to find out what other people are bringing because we probably only have room for 2-3 crockpots.

Beans. Red or white. I’d add greens but I’m from Bama so. Cook how you want but can keep warm in crock pot. Definitely serve w hambone in the pot for authenticity.

We live out of state, too-husband usually makes crawfish cornbread.

Do pulled pork in a crock pot.
5-7 lb pork butt or shoulder
2 big yellow onions sliced
1 bottle of your favorite BBQ sauce
2 Liter Ginger Ale
2 packs of Hawaiian sweet rolls
put half of the onion slices on the bottom of your slow cooker. place pork butt/shoulder over onions. top with remaining onions and then pour ginger ale on top of pork until 2/3 of inner dish of slow cooker is full. cook on low for 8 hours. drain in a colander and remove fat and bones. place on a flat surface and pull meat apart with two forks. place meat and onions back into the crock pot and stir in some bbq sauce but not too much. let it sit in the crock pot on lowest setting for an hour or so. serve as pulled pork sliders with Hawaiian rolls and a little slaw if you want to.

Shrimp remoulade or some other shrimp salad would work. Look in the TD recipe book for the crabmeat layered salad. Also works with shrimp. Just increase he amount a bit.
