I do not own a cast iron pot or stainless steel pot or an enamel pot. All I have is an aluminum pot w/ non-stick coating.

Can I use this or will my jambalaya come out completely terrible as it will prevent the accumulation of gratin?

I've cooked it in cheap aluminum pot and it turned out fine. Just had to make sure I stirred it enough to keep it from sticking.

I would go buy a lodge cast iron pot for like $30. Ace hardware has some.

My Family sells the Crazy Cajun Jambalaya Pots if your interested in a pot. I've never personalty used a Magnalite Pot but I have seen people us these for Jambalaya around town. It works fine.

If interested email me @gmail.com

My wife uses a Magnalite oval roaster and does it in the oven . I use a cast iron Dutch oven.

If all you have is aluminum non stick and dont want to buy a new pot then by all means use it and it will be fine.

I've used cast iron pots in the past but the kids kept bitchin that the food tasted too irony. Now I used an enameled cast iron, do yourself a favor and get one, I like the larger pots FWIW

If I want to use this for more than just jambalaya...

Should I go enameled or not?

Depends on what things you'll cook in the pot other than this jambalaya. You might be better off with an enamel pot.

Even with non stick pots, I scrape the bottom periodically because even if it doesn't stick, you can get "hard" rice if you don't.

Know anything about those Le Chasseur enameled pots they sell at the Tuesday Morning by your house?

I'm guessing that if your food has an "iron" taste, it probably needs curing. Rub some vegetable oil on it and put it in the oven.

Yes, I love pot in my jambalaya. Just make sure it's the good stuff and not that Mexican kind you pick up behind Winn Dixie.

It will work. Just use kitchen bouquet to get it the color you want before you add your rice.

I know. I know. :gasp: :omg:

Use a wood spoon, be patient, keep the fire low, don't let it stick in the bottom.

Could be what you're cooking in them and it's probably also do to the pots needing to be seasoned.

I never did any acidic foods in them, mainly rice and gravy and some were older pots. Neauxla I cook many dishes in the cast iron enameled pots, you really can't go wrong with one.
