Pork for jambalaya

Ok guess question. I have always used pork butt for my jambalaya.

Anyone use center pork loin? I ask because I am cooking for a large group and the person buying just asked if that would work because it's on sale. Not really a meat cut expert so figured someone here would have some advice.

I've used it before with OK results. You just have to make sure you don't overcook it because it can dry out.

would not be the best, has a much lower fat content than shoulder or temple meat

Temple meat sure works out great, but I am not a huge fan of it for eating. Switching to picnic next winter.

Get country style pork ribs, same thing as boston butt and easier to cut up

Go with Temple meat and you will never use anything else. No prep...just throw it in the pot.

You're correct but you'll generally pay more per pound for them. I just pick out a nice butt and ask the butcher to slice it into country style ribs. They'll do it without you having to pay extra in most all cases.

And I've only used temple meat once because it's not readily available here. But it was noticeably better than pork butt.

I happened to be in Gonzales on business one day and knew I was cooking a jamb that weekend so I went to Leblanc's grocery store. They carry it. Just go to the meat department in the back and ask for it.

Do you like pork in general ?

Also, Lamendolas stocks it.
