Pork Butt vs Boston Butt for Jambalaya

If you are making a big jambalaya, do you use the whole pork butt which is often used for smoking to get pulled pork...

OR

Do you use the Boston Butt cut of meat. Or does it matter?

Or are these the same thing?? I'm so confused.

The butt contains more marbled fat. It's better for smoking. If you want less greasy jam, go with the shoulder.

boston butt and pork butt are the same cut as far as I know, never heard either one including more than just the same section.

I use the whole shoulder (picnic and butt) for big jambs. Think of your arm from the elbow up. Your bicep would be the picnic (or shoulder) on a pig and your shoulder would be the Boston Butt...if you can visualize what I'm saying.


For small ones I like to use temple meat which comes from the head.

A pork shoulder is the picnic and the butt. This is the front shoulder of the pig.

The butt is known as Boston butt or pork butt. It’s the same thing. The butt is 1/2 off the shoulder.

The butt is preferred over the picnic because it’s generally better marbled meat and less bone. A picnic would work fine but it’s just much easier to use a butt.

The back legs of the pig are known as the ham.

I 100% disagree. Butt has more intramuscular fat and is much more flavorful and tender than temple meat.

Temple meat was popular with jambalaya cooks because (1) it was sold in 15 or 30 pound cases, (2) it was cheap, and (3) it is basically precut, you may just need to cut each piece once or twice, but that’s it.

I have no doubt that those of you who brag about temple meat only think it’s better because you think you know a special cut of meat that’s a magical secret. If you really think temple meat can taste better and get more tender than a butt, then you’re just wrong.

Completely agree, if I am doing 30 pounds of rice I don’t want to spend hours cutting up 50!pounds of butt and will buy 2 cases of temple and be done with it, but I prefer butt when making smaller batches , Better flavor and not stringy

It’s pig meat going into jambalaya, as long as the jambalaya tastes good, nobody cares about what part of a pig the meat came from.

Damn man, I use a 70 pound case of butts. Add some more pork in that jambalaya!
