Pork Belly emergency

Bought some belly at Costco today. Get home and fire up the electric smoker and then go season the belly.
I check on the smoker, it won’t get above 147 deg and produce no smoke (of course).
I throw them in the oven at 225, and try something I’ve never done. I fired up my PK with a slow smoke.
I can do 1/2 of the belly at the time. I figure smoke them for a couple hours for each batch.
It was a pain in the arse trying to get the PK set up as a smoker.
Temp is up to 205 now

Do you have the vertical space available to maybe put a layer of pork belly, a wire rack on something to lift it up a little (I’ve used small pipe elbows) and then another layer of pork belly on the wire rack?

Dude, you a life saver. It never crossed my mind. I have a folding footed rack that fit perfectly in there. All bellies are in the grill.

Costco also sells whole bellies because that's what I buy.

Yes, I know, but I like these strips because you get more rub and more smoke on them.
Plus they are trimmed
