But really, a love a good margherita if it's done well. Pepperoni and jalapeno is a classic.

Fresh mozzarella--I like the little pearls if you can find them, but sliced balls of fresh mozzarella are good too. Let it dry out for a little while after slicing before putting it on the pizza.

I like Johnny's sweep the swamp. The one on Highland started offering it already. Had it today and it is freaking amazing.

I'll take that a step further. When you buy that block of cheese, get either whole milk or fresh mozzarella. That 2% lot hydration stuff is trash compared to whole milk or fresh. Whole milk is harder to find, though usually cheaper. I usually use fresh from Costco, then break it up by hand as I'm adding it.



As for toppings... Pancetta is something I haven't seen mentioned. Prosciutto is awesome, but over been wanting to try diced Chesisi on a pizza.

If you get pepperoni, but Boar's Head or get thick sliced deli style and quarter it. If you buy Bridgestone, you probably won't be invited back for pizza night.

Basil is key, IMO. But if it's not fresh, it's not really worth it. And it's surprisingly hard to find basil right now. I couldn't find it, even at whole foods or fresh market. But it's not in season, so that probably plays a part.

I used some Columbus sopressata on a pizza on Monday. I was a little disappointed. I've used it plenty for charcuterie, but it just wasn't great on a pizza. I'll have to try a different brand next time.

I get this BelGioioso fresh mozzarella snack cheese from Costco and use that instead of shredded mozzarella. The little balls melt perfectly and they aren't full of water like some fresh mozzarella.

Also, go by your local butcher and see about getting some salami, pepperoni and Italian sausage.

I will fight you if you try to put arugula on my pizza. That shite is nasty.
