Peruvian Roasted Chicken w/Spicy Cilantro Sauce

Anybody ever made chicken like this? Plan to make the following recipe sometime this week:
For the Chicken
6garlic cloves, finely grated or minced
3tablespoons soy sauce
1tablespoon aji amarillo paste or another chile paste such as sriracha or sambal
1tablespoon lime juice
1teaspoon aji panca paste or 1 teaspoon pasilla chile powder
1teaspoon Dijon mustard
1teaspoon ground cumin
1teaspoon freshly ground black pepper
½teaspoon fine sea salt
1(3½- to 4½-pound) chicken, halved (see Note) or 4 pounds bone-in, skin-on chicken parts
Extra-virgin olive oil, as needed
For the Sauce
1cup cilantro leaves and tender stems
3 to 4jalapeños, seeded and diced
¼cup/1 ounce crumbled feta cheese
1garlic clove, chopped
1½tablespoons lime juice, more to taste
2teaspoons chopped fresh oregano or basil
¾teaspoon fine sea salt, more to taste
½teaspoon Dijon mustard
½tablespoon aji amarillo or other chile paste (see headnote)
½teaspoon honey
½teaspoon ground cumin
½cup extra-virgin olive oil
Lime wedges, for garnish

I've cooked chicken with the "green sauce" and it is great! Of course, the sauce is cilantro heavy. So if that is not your bag, you probably won't like it. To me, the sauce is very "fresh" tasting with just a little bit of kick.

I made it yesterday, but I grilled the chicken instead of roasting it. Turned out great.

I've done "Pollo a la Brasa" on the grill. Love it. I need to do it again, soon.

I have a Peruvian place about a mile from my house. Eat there probably once a month at least.
$35 for a whole bird, side and salad. $38 for a whole fried bird. They come with the cilantro sauce and a spicy aji amarillo sauce.
Also have great saltado, ceviche, lamb empinadas, Peruvian fried rice, marinated skewers - beef heart, duck breast, beef tenderloin, etc etc.
It's so good.
$35 for a whole bird, side and salad. $38 for a whole fried bird. They come with the cilantro sauce and a spicy aji amarillo sauce.
Also have great saltado, ceviche, lamb empinadas, Peruvian fried rice, marinated skewers - beef heart, duck breast, beef tenderloin, etc etc.
It's so good.

Love Peruvian food. roasted chicken, saltado, anticuchos, jalea, ceviche, papas a la huancaina. So good.

I get my wife to make extra green sauce to keep in the fridge. Stuff is amazing on a barbacoa omelette.

We are always looking for new and unique things to cook. After seeing this last week we decided to try it on Saturday night. It was fantastic.
We had the sauce again Sunday night with prime pork chops. Also delicious.
I couldn’t find the A-list chilli pastes. The only one I was able to find at Whole Foods was the sambal oelek chili paste so I doubled up on that along with some regular chili powder.
It was fantastic.

For those looking for something different to cook, try making Piri Piri Chicken. It's a Portuguese recipe. Here's a link to a recipe (there are many), or you can buy the marinade at the store (not as fun).

The sides and salad are big. It feeds us and our two kids pretty easily. Definitely worth the $, imo.
