The wife went back and got some broth after her bowl of stew. She commented that it was excellent French onion soup by itself.

All those onions I put in at the beginning had gone to pieces by the end. Obviously they helped make the broth so good.

Looks similar to mine and right up my alley. I can almost taste that sauce/gravy/goodness.

looks like you did an excellent job. couple points:

1 / carrots are cut far too thick

2 / thank god you used half of that wine in cooking because Apothic Red is fricking terrible

This looks amazing. I had ox tail the first time a few months ago at a Jamaican cafe, and it was great.

The question was not directed to me, but I assumed CW meant the raw tails shown in the first photo and that in his mind pre-coked = raw.

If that is what he intended, then he was correct. They had seven or eight packages in the meat market and I selected the one that looked best (meatiest) to me.

That looks great Dog, I'll be making that soon! Our Winn Dixie,Publix and Fresh Market all carry Ox Tails.

As I said last night in the WFDT thread, that looks great my friend! Thanks for going to the trouble of posting the tutorial. Ox tails are a common thing around here, mainly as season meat. Both grocery stores have them. I will be making this stew.
