Opening up a Cajun food trailer in Giddings Tx

Going to serve boiled crawfish, boiled shrimp etc. what are some other items I should include on the menu? Boudin balls, stouter, etc? Looking forward to it!

I would stick to whatever you can throw in the boiler. Potatoes, corn, sausage, crabs, crab legs, eggs, etc.

Seems to me that it would be easy to have a crockpot dish each day. Red Beans and Rice, Jambalaya, Gumbo, etc...

You think there is enough demand for that, especially in a place like Giddings? One thing I've learned is that Texans seem to like crawfish and will go to a crawfish boil, but they don't eat much. Asians seem to love them, but they go to those Viet-cajun places (mostly in Houston), and I don't think there is a big demographic of Asians in Giddings.
In general, I think anyone would struggle with a cajun food truck in rural Texas. I know I sound pessimistic...but I do hope you do well. Let us know how it goes. I've always wanted to do something similar because I love cooking for big groups, but I'm just afraid to take the risk.
As for your request - suggested sides would be boudin / boudin balls definitely. Like someone else said, something that you can keep warm in a crock pot and not lose quality, like red beans and rice / gumbo. Jambalaya would be difficult.

Thanks for your thoughtful reply. I do think it’ll be in demand especially during crawfish season. There is nobody even remotely close that serves boiled crawfish. That’s what I’m centering this off of. I’m only going to be open during crawfish season(other job really gets going in June)

You might take a look at the menu of this Cajun food truck in Dallas. Nothing they do is that great but they have been successful enough to open a brick & mortar place.

I would see that kind of thing as more festival type stuff than everyday fare.

Me too, but I fear it wouldn't be that successful. I actually thought about doing this myself...but Jambalaya would be pretty difficult to figure out since it won't keep well for a long period of time and it takes a long time to make. You'd almost have to have constant demand and time batches to make it work out.
FWIW Stuffed has pretty good jambalaya. Their original north location seems to do pretty well, but when they tried to open another location in South Austin, it failed and they had to close it. Such a shame because that place is great.

While it’s not a truck, Joel @ BayouBoys Poboys in Needville, TX is doing solid business. He’s from DTB, so he sources good seafood and knows how to cook. It’s not fake cajun or adapted to the locals: it’s the same sort of place you find all over south LA, just in TX. Check out his menu, etc: LINK

Is it not possible to do Austin? I ask, because Giddings folks, are not like small town Louisiana folks. They don’t love crawfish etc. I would highly doubt there is demand nor a large market for crawfish and Cajun out there. Those are not adventurous eaters.
Austin has a huge demand for it. Heck even Brenham would be a better choice.

As far as a menu, I would do fried catfish, fried shrimp, etc. Something you can do on a plate or on a sandwich. And maybe a daily special. Maybe some legit hot sausage.
Monday - Red Beans
Tuesday - Meat Pies
Wednesday - Duck and Andouille gumbo
Thursday - Jambalaya
Friday - Crawfish Etouffee (can do shrimp outside crawfish season)
Satuday - Some kind of seafood pasta (shrimp, crawfish, etc)
Sunday - Dirty Rice
All of these are things you can make a big pot of (with the exception of the meat pies) and when the pot is gone, it's gone!
