Old time Vacherie Madlins

A while back I remember some one asking about this old style Vacherie sausage. I said I would look around and ask around and I did. I even helped a friend stuff 7 of them for his smoke house tomorrow. A mutual friend has a lil smoke house in back Vacherie and he makes them and sells them along with lots of sausages and such.

OK, what exactly is this? Is this another name for ponce or chaudin?

It's basicly a big aundoille bout half way twee that and a ponce. Te casing is from a cows large intestine I think. course ground and smoked lots longer its excellent as seasoning meat. I recalled some one asking a while back, so I found it.

I like their HHC, Boudin and andouille. my mom bought me some rice less boudin but I didnt care for it at all.

Went and bought some sliced. It’s basically a very large andouille. Talk about good. He pronounced it “mode-lan.” I also bought one of their daily specials, a Farre dressing sandwich

HOLY crap I am so glad to have found this place. Talk about a diamond in the rough! Everything I’ve had from there has been excellent. The maudlin is up there with Wayne Jacobs as the best andouille I’ve ever had. My other favorites are the jalapeño honey sausage and the smoked garlic sausage, and the sweet Farre dressing. The homemade caramel/lemon jelly rolls are awesome, as are the bouille pies. Mr. Lester knows what he’s doing, that’s for sure.
