Our next challenge is beef short ribs as selected by challenge winner MSMHater.
Submission thread will open at 9:00 am on Tuesday, Nov 24.
Submissions posted after 9:00 pm will not be considered.
Remember, at least one photo. You may submit more than one entry, but in separate posts, of course.
Voting thread will open after 9:00 pm on Tuesday and voting will continue through ... well, that is to be determined.
Start looking for your award winning recipe!

Can we get some pictures of specifically what beef short ribs are, and what they are not like we did in the last thread so that there is no ambiguity?

This is a great choice because of it's versatility. Beef short ribs can be found in a variety of retail offerings and provide the cook with endless possibilities.
From whole plate
to traditional 3 bone flanken cross sections
or thinner K-style, K-cut, Korean cut flanken
and individual portions.
I'd recommend heading over to the butcher shop to see what they can do for you and to inform your strategy.
I jut might enter this one!

What about chuck short ribs? Just asking if it needs to be clarified. I have some old photos I could submit, but may try something on the Santa Maria again for this one. I love short ribs.

Smaller bone, and if I remember correctly they are cut further up than the plate rib. Just for the heck of it and I look forward to eating some of these in a few weeks while in Texas...
A chuck rib, smaller and usually 4 bones.
What most people think of when they hear Beef Ribs, plate short ribs or Dino ribs. These are cut into multiple different cuts like another poster showed in his various dishes. Some I did on my last pit prior to selling it.

Oh, ok. So it's the cut a place like Killens would cook and serve? Thats the cut that started my obsession with beef ribs. It was life changing the first time I tried it at Killens bbq.

That’s exactly right, all the Texas places serve the “DIno” ribs.

Your first picture (plate ribs) are what is called Dino ribs. They are hard to find. I found some in NWA and they were fantastic smoked on my pellet smoker.
