Non-Louisiana restaurant’s recipes for Louisiana food.

I’ve lived outside of Louisiana for quite a while but still love the food. So I look for it at restaurants when I’m out. I’m currently in Florida and was looking at a menu at a seafood place. Look down at the description for their jambalaya under their lunch entrees.

This is at a popular and well known restaurant. There are so many easy recipes online that explain how to make these dishes. Why are chefs making these alternatives yet using the same name? Just curious. I see it all the time.

I mean it’s clearly gumbo.

ETA: nm. It’s not even gumbo. Not even sure what it is.

This is their gumbo- A Southern classic! Shrimp, crab, crawfish, okra, garlic, onion, tomatoes, peppers, celery and file gumbo.


I like to see a side by side of the Jamb and the Gumbo..

That’s what’s even crazier. They have a gumbo on their menu. Now at least they call it a Florida gumbo. Whatever that is.

ETA. I have pics of both but don’t have anywhere to host. They def do not look like what they are supposed to.

Florida transplants, here too. Don't even try, they cater to the Yankees here. In St. Aug, we enjoyed Harry's, overlooking the water. But, making it at home is so much better (and cheaper!)

For some reason, many people up here think that jambalaya is a saucy dish that is poured over white rice. I've lost count of the number of times that I've seen it up here.

Rule #1 - never, ever, ever order anything called cajun, creole or blackened (or anything with a typical south Louisiana sounding name - jambalaya, gumbo, etouffee, etc) if you are north of I-10, west of the Louisiana/Texas state line or east of the Louisiana/Mississippi state line.

That’s my point. If you were a chef at one of the restaurants, wouldn’t you want to try and create the best dish to represent what it is supposed to be? I just cook at home and can recreate the same thing from easy recipes. Not sure why they want to change it. Just call it something else if you don’t want to cook the real thing.

Got it now.

I love how literally everything on the menu, including beers, wines, drinks, etc. is priced at $__.99.

I don't think gumbo, jambalaya, Etoufee, etc. is particularly good at very many restaurants in South LA. Exceptions would be places in Nola like MR. Bs, Herbsaint, Couchon. They are dishes that are better made and eaten at home.

Lol - my wife's rule is don't order it if you are east of the Atchafalaya. There are exceptions but some truth to it.

I agree but some chefs are just creating whatever sells. Like someone stated before...Florida has become New New York.

I guess to me, the real thing would also sell so why change it. Maybe we Louisiana people are the only ones that like the real thing.

Right. Where does one even come up with the idea that something that looks like that would be "jambalaya"?

Are we pretending he was actually serving real jambalaya at one point (if you look at the varied pictures of the dish, they are all over the map, but none look like what I would ever call jambalaya) and couldn't sell it, so he came up with this concoction instead and it goes like hot cakes?
