I really enjoy Mandina’s too. I’ll probably still go there.

Surprised crabby Jack's and Manchu didn't make it. They are usually on it year in and year out. Doesn't matter as I would still eat at those two plus mandinas without a second thought

Biscuits and Buns on Banks is about 4 blocks from my house and there is always a line waiting to get in that place on weekends when they do the most business. It's not unusual to see a dozen or more folks standing around outside the place waiting to get in.

I've never been, so I can't comment on the quality of the food or even how the place looks on the inside, but I do know it's a moneymaker for the owners.

That list is a joke. Did they intentionally not go inspect the tourist traps in the FQ?

One of the jobs I had back in the 70's and 80's was installing commercial hoods, fresh air and exhaust systems and stainless steel wall coverings in restaurants.

The absolute worst restaurant I worked in was when Dookie Chase's Restaurant was changing out their kitchen equipment, hood and exhaust system.

We had to use electric knives to cut through the grease built up between the fryers to get them away from one another. We had a steam cleaner come in to give an estimate and all he did was look around and then walked out without saying a word and never got back to us. Every day I went back to the shop I had to use mineral spirits to remove the grease from my tools.

After the hood was installed I climbed into the attic to see how to best run the new exhaust duct to the huge exhaust fan to be installed on the roof. I got up there and started slipping on the ceiling joists and realized the attic was covered in grease since their exhaust never went out through the roof contained in duct work. If they ever have a fire in that building, it will go up like a Roman Candle if it gets in the attic.

Agree. What about that place 2 weeks ago in the FQ that had the rat issue. Did not even make the list. I would say that that is a critical violation, not on the list.

Nothing bothers me more than the though of rodents milling about where my food is being prepared, and that, I feel, is a pretty common thing in the Quarter and many other restaurants around town.

Let's face it, there is a lot of food waste being disposed of, food being prepared, stuff being splattered, dropped and lost in the cooking equipment. A buffet for rodents if ever there was one.

Damn, I may never eat out again.

Chemicals are stored with/above food, equipment, utensils, linens, single-service or single use articles. STORED ON ICE MACHINE

Employee was eating in a food preparation or other area where food, utensils or other items requiring protection were stored

A current state food safety certificate is not held by the owner or a designated employee of the establishment.

Food was not prepared with the least possible manual contact, with suitable utensils, and on surfaces that have been cleaned, rinsed, and sanitized prior to use to prevent cross-contamination.

Food contact surfaces and utensils are not clean to sight and touch.

The 3 compartment sink is not used in proper sequence to wash, rinse and sanitize.

An approved sanitizer is not being used during manual or mechanical warewashing.

And then there is always the rodents/insects.
