I’m making this and wondering if others have tried it.

Try adding diced sweet potato. It soaks up chili flavors nicely and has nice texture.

My chili is similar with no tofu or beans. It’s great.

I put broccoli, cauliflower and beans in my veggie chili. The broccoli and cauliflower really do have a meat like texture. I may make chili today.

I’ve had great vegan chili that used portabella oyster and hen of the woods mushrooms.

At the risk of condescension and ridicule.....
This makes 10-12 servings so I like to eat it for 2 or 3 days and freeze some for later.
Ingredients:
2 diced onions
1 cup sliced carrots
2 chopped poblano peppers
1 chopped green pepper
3 cups broccoli broken into bite size pieces
2 cups cauliflower broken into bite sized pieces
2 16 oz cans pinto beans
1 16 oz cans black beans
1 15 oz cans tomato sauce
1 15 oz can diced tomatoes
1 cup chopped fresh tomatoes
water-3 16 oz cans
1/8 cup Worcestershire
spices:
chili powder- 6-10 tbl (I make my own chili powder but used to use store bought so that will work. But my quantity is based on my powder so your mileage may vary. The amount I add is "to taste" so I am estimating on the quantity)
For the vegetable saute:
1 tbl cumin
1 tbl white pepper
1/2 tsp garlic salt
1 tbl chili powder
Added during chili simmer:
2 tsp garlic powder
1 to 2 tsp curry powder
1 tsp coriander
2 tbl smoked paprika
1 tsp salt
1 1/2 tsp white pepper
1 tsp oregano
1 bay leaf
chili powder to taste
Corn starch (optional)
Instructions:
1. saute Onions, carrots ,poblano and green pepper until onion is carmelized. ( I actually roast my carrots since I have trouble getting the soft just by sauteing). Add saute spices after about 5 minutes of saute.
2. Add water, tomato sauce, diced tomatoes, cans of beans, broccoli and cauliflower (and carrots if you roasted them). Also add 3 tbls of chili powder and bring to boil and reduce to simmer.
3. Add the simmer spices and simmer for 30 minutes.
4. Add another 3 to 4 tbls of chili powder and Worcestershire sauce. Simmer for 15 minutes.
5. Taste to see if you need to add more chili powder and add as you see fit. You can optionally add chipotle powder or cayenne if you feel it needs more kick. I often add 2 dried chipotle peppers at step #3 to add kick and some smokiness. Also add the fresh chopped tomato. Simmer for 15 minutes.
7. Check to see if the broccoli and cauliflower are cooked and soft enough to eat.
6. I often find the chili is a bit thin and so add a tbl of corn starch (mixed in a bit of water first)to thicken the chili.Often store bough chili mix will include a corn masa packet to use as a thickener. Simmer for 15 minutes to thicken.
7. salt to taste and add your last chili powder addition to taste if you feel you need more.
8. Serve
Optional:
You can use a dark beer in place of water.
I've tried adding some dark chocolate but never thought it added anything but I am afraid of adding too much.
