Well, you know those people that live to the west of the state think they are coonasses and think they know how to cook. No difference then people that live in TX.

Yeah, my great granmaw used to say, in her thick Cajun accent, that you had to get the roux as dark as an "Indian's behind". Not sure if she had ever seen an Indian's behind and didn't really want to know if she had. Also, that probably wouldn't go over too well in today's PC culture.

I grew up in Louisiana for 22 years and for the longest I didn't know that there was some unwritten rule that you can't make gumbo in warm weather. Still doesn't make sense to me.

Looks delicious, but needs more roux. I like my gumbo a lil on the darker side. But hey, to each his own.

Never too hot? You work indoors? I got back home the other day from being in the heat all day and the wife wants to cook a gumbo. Told her ok but she'll need to turn the AC up. We're gonna wait. Too hot bro
