Need Redfish on the half shell recipes UPDATE (w\final results)

I have a huge filet from a bull red I caught a while back. Going to grill it scales down.

Anyone got any good recipes for seasoning?

I just put some slap ya momma.

I grill it and spread melted butter and lemon juice on it while grilling.

You can't ever go wrong with Prudhomme's blackened redfish seasoning. Melt a little butter and spread over fish. Sprinkle a fairly liberal amount of seasoning and grill scales down. Finish with some lemon juice.


eta: If you can't find the blackened redfish seasoning his Seafood Magic is solid as well.

Salt, butter, a hint of garlic on occasion.

Redfish is too good to cover with too many flavors, IMO.

I like to take it in a greek direction. About a teaspoon of fresh oregano (pick the leaves from the stem), half a lemon's worth of lemon juice (or a whole lemon if it's a little dry one), a clove of garlic, and a few T of EVOO....puree all that together (immersion blender works well) and spread over the slab o'fish. Sprinkle w/salt & cracked pepper.

Oh, if the fish is truly huge/thick, lightly crosshatch the topside with a knife first. Gives a few more cracks for the flavors to adhere, will speed cooking in the thicker parts as well.

Thanks for the suggestions. I don't have a blender to pure all of that. It is a very large and thick slab. I think I may perforate with a fork. The blackened seasoning sounds like a nice simple way with some butter and lemon.

OK, if you don't have a blender to puree, use a knife to finely mince the herbs, smash the garlic clove to a puree w/some salt and the side of a knife, and then just stir together w/the EVOO. Ain't no big deal...a mortar & pestle will work just fine too.

if you don't like olive oil, feel free to use melted butter. but the oil is more mediterranean...

Don't use mafia Italian cut olive/sunflower oil by mistake.

All of the above are good-now and then at the end I will brush just a light coat of BBQ sauce and let it just set. Good and just something a bit different. I filet them all the way out now though and never keep a bull red.

No. I don't use blackened seasoning. Maybe a light bit of Tony's. Or salt, pepper and lemon.

Agree. Big ones are fun to catch, but not the tastiest to eat, IMHO.

I don't keep them. Too much trouble to clean, more chance they have worms and that to me is the breeding stock. But if I had one I believe I would prefer it in a courtbouillion. I made one not long ago with all of my redfish trimmings after cleaning my fish and portioning them. It was good. I use Red Fish Grills recipe. It is light and almost brothy
