Need a couple of skillets

What should I buy? Stainless, non-stick? I had non-stick and the coating is worn out. Not trying to break the bank. Thanks.

I have a nice, 12", copper bottom, non-stick pan that I use for anything and everything. If you're careful with storing, cleaning and use the right utensils when you cook, it does anything you need it to.

I buy inexpensive non-stick skillets and replace them every couple of years. Costco has some. Just bought a huge 14" non-stick, but probably won't use it nearly as much as the 12 and 10 inch, which are used almost daily (one or the other and sometimes both).

I have one stainless that I use when I want to feel all chef-like and a number of cast iron.

I like to use cast iron for searing steaks, cooking burgers, etc. because it's seasoned and it gives a great flavor to my meat. I like using stainless steel because good for creating sauces from the fond that meats and veggies leave behind from cooking. I use non stick for eggs mostly but I have one that is my go to for just about everything. You can't go wrong with non-stick, unless you're looking for a nice sear or making a sauce from it.

De-Buyer are awesome, there was a thread here a couple of years ago and everyone was buying from Amazon. You have to season them, then they are non stick and good to go...

But within 2 years it too will need replacing. Better to get a Bakers and Chefs pan at Sam's for $20 instead of $40.

Your local restaurant supply store is your friend.

Their nonstick aluminium skillets stand up to a wire whisk just fine.

All of my pots and pans are slowly being replaced by them.

Vollrath Ceramigard Skillets

Check these out. They are affordable and have a ceramic-based coating which is a more durable that the Teflon (PTFE) coating that was mostly used on "non-stick" skillets.

You can use metal utensils in these whereas the Teflon coating would scratch and wear off over time.

My set of Calphalon is coming up on 2 years. No sign of wear or coating breaking down. I've even caught my wife a time or two trying to use a metal spoon while cooking with them . I politely asked that if she doesn't know what kind of utensil to use then use plastic!
