Need a Broccoli and Cheese Soup recipe

Picked a bunch of broccoli this morning out of the garden. Anyone with a good recipe?

Here's my go-to.
Of course the amount of ingredients is dependent on how much soup you will be making but I generally make about 2 quarts worth when I do.
Cut off the florets and cut the bigger pieces down a bit so they fit easily on a soup spoon to eat. Take the heavy stems and strip off the outer hard coat and cut them up in cubes.
1/2 stick butter
4 tbsp. all purpose flour
1 onion diced
3 cloves garlic minced
4 cups broccoli florets
4 cups peeled and cubed stems
1 qt. chicken stock
1 qt. milk
Shredded cheese of choice to taste
Salt and Pepper to taste
Make the blond roux and after just a couple minutes of cooking that, add the onion and cook down for a few minutes then add the garlic to cook down a couple minutes more.
Add the stock, milk and cubed stems and cook all that down until the stems are very tender. Once they are tender, use an immersion blender or food processor to liquify everything.
Add the florets to the soup and cook that down until they are tender to your liking and then add the cheese. Check for salt and pepper and serve.
The cheese will thicken the soup up nicely and if you want it thicker, you can use a bit of water and corn starch mix to thicken it further.

You can always use a bit more flour and butter when making the roux to make it thicker from the start instead of using corn starch at the end.

Note: If you have no chicken, just leave it out
Creamy Chicken, Broccoli and Cheese Soup
Ingredients:
2 cups broccoli, diced small
1 cup chicken, cooked and diced
4 Tablespoons butter
16 oz cheddar cheese, hand shredded
2 Tablespoons cream cheese
1/2 cup onion, diced
1 Tablespoon minced garlic
2 Tablespoons yellow mustard
3 cups chicken broth
1 cup heavy whipping cream
Seasoning (to taste) - Pink Himalayan Salt, Pepper, Garlic powder, lemon pepper and Italian seasoning)
(Optional) 1 teaspoon Xanthan Gum, used as a thickening agent
Directions:
1. Dice up the broccoli and cooked chicken into bite size pieces. Set it aside.
2. In a stock pot, add butter, diced onions, minced garlic, some pink Himalayan salt, pepper, garlic seasoning. Cook over medium heat until onions are translucent.
3. Add broccoli and continue to cook for 3-4 mins until it turns bright green and is soft
4. Add the chicken, chicken broth & heavy cream, yellow mustard, and stir.
5. Bring to a boil. Once boiling turn down heat to simmer, slowly adding the cream cheese & the cheddar cheese, with mixing.
6. Add garlic powder and pink Himalayan salt, pepper, and Italian & lemon pepper seasoning to taste.
7. Let cheese melt, Add Xanthan gum if desired for more thickness, by mixing with a little warm broth before adding it to the soup.
8. Stir until soup thickens

You didn't ask for this, but here is another good broccoli recipe.
Drat.
Now I can't find my recipe. Only the photos. I will look until I find it and add it to this later.

Ingredients:
- 2 cups Broccoli, cut into small pieces and steamed
- 1/2 cup Bacon, cooked to crisp, broken into 1 inch pieces
- 1 cup Shredded medium cheddar cheese
- 2 eggs, whipped
Directions:
1. Cut broccoli into small fork sized pieces, season with
1 teaspoon salt and 3 tablespoons melted butter. Steam in microwave in the bowl used for the dish until almost tender (3-5 minutes).
2. Cook Bacon, break into pieces and set aside.
3. Shred cheese
4. Whip eggs
5. In the casserole bowl, combine broccoli, eggs, and half of the cheese. Season with ½ teaspoon salt and ½ teaspoon black pepper, then top with the other half cup of shredded cheese.
6. Bake in 350 degree oven until the top cheese melts (20-30 minutes), then top with cooked bacon.

I personally don't want to take chances on a Google recipe. I want a tried and true Louisiana recipe. I am sure most here feel that way. We also benefit from others wisdom and pro tips. (Sometimes we also learn that a particular restaurant has an awesome option of what is being asked for)

I add a bit of grated carrot to mine. It provides extra color & texture to the soup.

I love broccoli. I usually just toss in a mix of olive oil, hot pepper flakes, lemon, s&p then layer with some hand shredded parm and broil after roasted. Gonna try this.

I would add a sherry, white wine or even a touch of vinegar to any of these recipes. It pops with the cheese and brings it to the next level. Just my suggestion, but other than that this and MDs recipes look legit.
