I bet he’s going to tile wall to ceiling so trading practicality for aesthetics. Overall I think it looks fine. Sucks the range, which can be a great focal point, looks into a wall 6’ away. You could always center it and put the sink in the island, but overall it’s fine the way it is

Back of pantry door mounted spice rack.

On the cabinets ours go all the way up but the doors are closer to normal height. Putting another shelf at 7+ foot is almost useless. Consider that with 9’ ceilings you need a 9”-12” crown molding. If you want upper lights I would stop the cabinets below ceiling and use upward accent lights. I would avoid the glass front option.

The cabinet above our double ovens has dividers in it for storing baking sheets, trays, and cutting boards.

I've attached some pics for reference.

Island Micro Drawer with warmer below. This is the 30" to match the warmer. If no warmer go with a 24" to save space because inside cook area of micro is the same just a bigger outside plate. See how the controls flip out 45 degrees.

We have 9' ceilings and this is our cabinet height with the "Crown" A fourth shelf would be useless.

This is the extra hot water faucet and the pull out cabinet for the sink area.

And this is the spice rack on the back of the pantry door. They make some that are full length and/or metal.

ETA: I said a 9"-12" Crown and that is too much Crown. I was thinking total height above the cabinets. Our Crown is about 6" and then we have the other molding that actually extends down about 14" below the ceiling.

If you want some good advice on appliances visit Yaleappliance.com. They will not sell to you unless you are in the Boston area but they have great videos about the different high end appliances.

Also with a 48" range just remember that you will need at least a 10" flue if not 12". For your vent hood look for one that has a motor away from the hood. Ours is an "in-line" in the attic about 25' from the hood they also make some that the motor is attached outside of the house. This reduces inside noise.

No double ovens wouldn’t work for me. I see all these new houses being built with big kitchens and one oven. Baffles me. Get double ovens.

Not sure what the 12" cabinet next to the sink is for. Might could reverse it's location with the 36" drawer and put it next to the range or shorten either side of the range cabinets from 36" to 24" and put a pull out divided sheet pan drawer next to the range as per the below image.

Also be sure to have an electrical outlet on each end of the island just below the counter top to hook up mixers, insta-pots, slow cookers ect..

Do you have the option to do a 48” range top with double ovens in a wall?

I think that set up is best. Especially if you have deep drawers below your cooktop for your most frequently used pots and pans.

not w/o losing valuable counter space and making the kitchen feel closed in. That's what I want to do but don't see how it's possible.

they are just more in your face when you are standing in front of them...with 14" cabinets, we are able to have two stacks of our cereal bowls in front of each other...we could not do that with 12"...also have some platters and serving trays that we keep on top shelf of one upper cabinets that would not fit it it was 12"...

that being said, 12" is standard...I would just measure anything you plan to store in your upper cabinets and make sure they will fit with the 12" depth. you can always store bulky stuff in other places in your kitchen like lower cabinet.
