The Kitchen aid grinders have a pack of 7 different dies for $10ish. It is fun to try different ones for different results. I made my own ground beef and chicken for a while, and will start again soon.

Nice job, I found it challenging the first few times to stuff with out blow outs or under filling. I buy natural casings at grocery stores , very common.
I’ve made elk, pheasant, deer all with 50/50 pork.
Thanks for the recipe , most important is the salt ratio.

Yep, I forgot to add it to the recipe list but I went back and revised. I used 9 jalapenos, deseeded 6 of them, and made a test patty and was content with the heat.

I found the best thing to do was under fill a bit, squeeze it together where you wanted to make your links, and allow your twist to tighten/pack the meat in really well where you wanted it. My blowouts all came from overfilling and not having enough room to twist the links.

I enjoy his content and have made a few things based off of his videos. He just dropped one where he made homemade kolaches and it got the wheels turning about using that jalapeno cheddar sausage to make some kolaches with.
