there used to be a cart here that served burritos late night. he just kept meat that appeared to have been cooked in crock pot in a warmer. a crock pot or other warmer would open up a world of possibilities for wetter items (roast, pork, etc.).

But seriously, I’d upgrade to a grill/flat top because a basic sandwich/salad truck isn’t very enticing.
