Oh my lord we are in the midst of a consultant. And apparently a not very well known consultant.

I'll give Ruffin the best feedback he will ever get right now for free. I passed by Ruffino's last night at 9:30 (with a sick kid-so I couldn't stop) and the parking lot was full. LeCreole across the street was empty.

I've been in and around the restaurant biz my entire life. Like since I was 5 years old, and that quote is one of the silliest things I've seen, ever!

We wake up every day and make the best version of each menu item we have every time it's ordered. Our standards are our own. Trial and error happens with us sampling our food and trying to make it better without comparing to our chief competitors, only our standard of excellence.

I have a passion for my place. I feed my family off of what comes out of our kitchen. I give two shits about the competition I'm trying to make my place the best it can be.

I don't doubt your passion. But restaurant customers don't care about your passion, your hard work or your restaurant experience. They care about themselves. If they are not getting what they want from your restaurant, they will get it elsewhere without blinking an eye, without a thought of you and your family.

People do judge your restaurant based on their experiences at other restaurants. Just browsing this one thread will give you all the proof you need of that. It's foolish to ignore the competition.

You don't have to do everything right or be the best restaurant in town to be a successful (profitable) restaurant. But you do need to do the things right that matter the most to the people living and working in your specific market area, and do it better than your direct competitors.

To find out if you are doing these things right or not, all you need to do is stick your head out your front door and take a look at your competitors' parking lots. Who's bringing in the most business? If it's not you, you need to ask yourself why not. If you don't know the answer or you blame the customers for not "getting it," it means you can't see the forest for the trees and you need help seeing.

I always enjoyed Ruffino's while living in Baton Rouge. One of my favorite spots in Baton Rouge. Even if it was in New Orleans, I would still visit it every so often.

When customers come in to our place we strive to give them the service and food so they come back often. I can't control what happens outside of my place, only what we do.

My competitors parking lots are never significantly more full than mine. That can be attributed to our work inside our place.
