Yes, this is what I should have said. I stir it in slowly and have never had grease except for what you can expect from the sausage or chicken. Never any in seafood gumbo.
If you get a lot of grease it is either roux separating or cheap sausage.

I bought one of those and it made a mess.
I just refrigerate the gumbo, put the congealed fat in tupperware and microwave back into liquid form later to pour over the dogs' dry food for their breakfast. They love it.

I've heard of folks using an oil mop since it only sops up grease and not water.

Put the pot half on the fire and half off. The boiling on one side of the pot will push the oil to the side not on the burner. From there you ladle it off. It is quite easy using this method.

The best way to do it is use oil absorbent pads used to clean up oil spills.. If you can get some from somebody that works at a shop or plant.. Cut into little squares, it soaks up just the grease and not the gravy

My grandma used to use paper towels or cheesecloth..
