Most effective way to get rid of oil / grease on top of gumbo?

Put it in the fridge. Fat will rise to top and solidify. Then remove in whole chunks

Yeah if you're not going to serve right away this is the obvious answer

Otherwise I just try to spoon it out as it still rises to the top

Take a dry piece of paper towel and lightly place it on top of the gumbo. The grease on top will be soaked into the paper towel. Repeat...

ladel off as much as you can, then the paper towel works nice for the last bit. Like other poster said, it will take several times to get all of it off the top.

If you're getting grease in seafood gumbo, your stock is not hot when you add it after browning veggies, the roux is separating.

In chicken andouille gumbo, same answer partly, you can get grease from chicken or sausage of course. I use a ladle. Paper towels have formaldehyde in them, do not use as coffee filters or use to remove grease.

How hot does the stock need to be?

I've poured the stock in when I thought it was still pretty hot and I got some grease

Should I just leave the stock simmering right up until I add it?

I watched my dad pour it In right after he had cut off the burner and pulled the chicken out. Maybe like 2 minutes after-and I scooped a disgusting 3cups of "mostly" oil/some liquid off the toP at the end. I assumed it was from greasy dark meat (he used a bag of chicken parts)-but do u think it was the roux seperating? I never thought of that.

I've had separation with seafood gumbo a few times. I had added hot stock to hot roux/trinity so the problem was not the temp difference. I think it may be the oyster liquor that was in the stock but I'm not sure. Now I use a whisk when adding hot stock to the roux slowly to incorporate. So far it's working.

Yeah I'm just hoping the other guy knew as well

I might be going to the office as well. I've been putting off the clerical portion of my scope of work forever so I'll be throwing a bunch of shite in binders later so I can mail them.
