Mixing diced pineapple into ground pork?

Anyone ever mixed diced (or can of crushed drained) pineapple into ground pork and made into burger patties to smoke? All I see is grilled pineapple rings on top. I’m wondering if I could incorporate it into the patty? Too over powering? Will make the party fall apart?

Sounds worth trying. Make a grilled pork meat loaf of sorts.

i think its like onions, too much and it falls apart but if you get the right combination it can be great

That’s what I was wondering. With the pineapple being so juicy would it fall apart.
I want to smoke some pork burgers with a killer hogs “the bbq rub”. I just used it on some ribs and it had a nice sweet flavor to it but I don’t know if I want to incorporate it into the patty or just the outside of it. Thought maybe pineapple or diced bacon would add some flavor to the inside.

You can definitely do it as you would any other vegetables. Just don’t leave in for an extended period of time before cooking. The pineapple juice starts to eat the fat in the meat and will make the texture off

Maybe drain some of the juice out of the pineapple before adding to the meat. Squeeze it out in a tea towel, a la spinach

We get pineapple jalapeño sausage and it is always a hit

Add some type of binder to the meat, dry powdered milk is what I use when making smoked sausage. I like to dehydrate fresh pineapple and I was thinking about adding some of that to some sausage...still may. Let us know how it comes out.

That’s what got me thinking about it. I got some deer/pork sausage with pineapple in it. I’ll report back when I cook some up.

Cut up some candied pineapple and do it. That way moisture levels arent of a concern

Or use freeze dried pineapple powder rather than actual fruit. Add flavor without the moisture or texture of the fruit.

Fresh pineapples contain a natural meat tenderizer and might make your pork a littly mushy if you were thinking about using fresh pineapple and a long slow smoke.
I believe the canning process destroys the enzyme if you were planning to use canned.
Just something to remember when you want to cook meats with pineapple.

I have used canned when making sausage. It definitely has the same effect if left in too long before cooking

Grate the pineapple into a colander, lightly salt it to drain excess mosture. Then squeeze excess out in hand, work flesh into the ground pork. Don’t need much pineapple flesh to get the flavor.
I’ve done this before and makes great burgers. I recently did this as sliders on King’s hawaiian rolls.

Make sure to use only canned pineapple. Fresh pineapple contains bromelain, an enzyme that digests proteins, it will turn your sausage into mush. The canning process heat destroys it.

Oh yea king Hawaiian buns would be legit for this I bet. I was wondering what buns condiments and toppings for something like this.

So throw some ideas of toppings out at me. Some sort of mayo aioli type of spread. Bacon...thinking yes to bacon? I may do these Friday...

Pork plus pineapple calls out for soy and ginger, imho. A teriyaki style glaze, perhaps...

Try adding just the juice to the egg/bread crumbs mixture.
