friend's dad is a usda plant inspector. always said to go by smell. if it smells bad, it's bad. if it smells ok, it's good to go. quality drops at a certain point (particularly texture), but shouldn't hurt you. now if only i could get my wife to agree

Is there any lag time between old meat being "harmful" and it starting to smell bad? How long would that typically be, if so?

This is essentially what I was asking Baronne. Curious to see if he has a different answer.

Meat begins to smell bad when spoilage bacteria grow. Kinda cool that nature has a way to warn you. These spoilage bacteria may not necessarily be harmful to you but they serve as a warning that harmful bacteria, if present, has had enough time to grow.

The bacteria that you’re concerned about with food safety, E.coli 0157H7, listeria monocytogenes, salmonella, etc., may not smell bad to warn you. (I haven’t heard of them smelling bad)

But, you're saying these aren't typically "spoilage bacteria" that would be related to a 'sell by' date?

Correct. The harmful bacteria must be introduced to the meat during processing. Processors are inspected by the USDA to PREVENT the harmful bacteria from being there. Use by dates for cooked meat is based off spoilage, not how much E. Coli can grow because you’re taking steps to prevent E. Coli from being there.

Now, a sell by date for raw meat, I’m not sure if the studies take into account the harmful bacteria or not. To my knowledge, they don’t, but it could make sense that they do, especially chicken and salmonella. I’d have to look that up, it’s a good question.

Food poisoning is just a free cleanse, roll with it. There, I'll preempt my own statement that I will cook just about anything if it is the kind of meat I can get above 170 and keep it there long enough to kill things. I'm not going to go with smelly meat at medium rare though.
