This is where you are wrong. You don't understand restaurants and overhead etc...
Were you going to eat it with your hands or did you bring the paper plates and plasticware with you?
If you're going to use their restaurant, their plates, their silverware, to eat YOUR dessert, you should pay.
The more you post, the more certain I am that you don't get it. They owe you good service and good food. They do not owe you free service relative to your own brought in food, regardless of whether you cut it yourself. You should have dessert at your own home if you're not going to pay the minimal fee.
Somehow, I don't think Mansur's will miss having you as a customer.

Not as much as the people who work there but I have worked with and around enough people who have and have a decent understanding of it.

You are right they have the right to charge but as a courtesy most places don't.

No this is the first time I did it since I was a teenager or still in college if I remember and that was a long time ago. I have known people have brought cakes to other places and not had a problem.

I've worked in many restaurants and there was always a surcharge for cake cutting. This includes fine dinning and casual dinning.

Only time i've brought a cake to a restaurant was for my girlfriend's birthday last August. It was her friend's idea, not mine, and I expected some kind of resistance from the restaurant.
We went to Louisiana Pizza Kitchen and, to my surprise, they didn't charge us anything despite serving it to us as if we ordered it there. I left the biggest tip (by percentage) of any meal i've ever paid for.
My point is that a lack of "cake slicing fee" might pay off for the server more than having a fee in the first place.

It really doesn't matter. The point is that if you're going to a fine dining type restaurant, you shouldn't be surprised to be charged. I would have called the restaurant first to inquire as to whether it was even okay to do so as a courtesy to the restaurant. I don't think there's anything wrong with bringing in a birthday cake if you check to see if the restaurant is okay with it at which time you will be alerted to any possible charge. However, to expect to go to a nice restaurant with your cake in hand, asking them to not only keep it for you, but to provide eating utensils and plates and then be surprised by a nominal charge is just silliness.
