Making Shepherds pie with eggplant instead of meat?

Coming up with a few Lenten recipes, and trying to cut down on red meat, so has anyone had success with substituting eggplant for the lamb/beef? Just curious to get peoples feed back

Some of my go-to dishes for Lent include:
Seafood Gumbo
Shrimp Stew
Crawfish Pies
Seafood Stuffed Bell Peppers with plain red gravy and pasta
Fried Catfish/Shrimp with French Fries or Potato Salad
Veggie Lasagna using Swiss Chard or Spinach instead of meat
Tuna Salad sandwiches
Grilled Cheese sandwiches
Broccoli/Cheese Soup
Potato/Leek Soup
Caesar's Salad with broiled fish
BBQ Shrimp with French Bread to sop up the liquid
Eggplant/Shrimp/Cheese Casserole

That combo doesn't sound appealing to me. Eggplant parm does, though!

Eggplant seems weird texturally to me for a substitute. maybe medium firm to firm tofu might be a good substitute.

Several recipes for vegetarian shepherd’s pie used lentils, or lentils and mushrooms. Others used mushrooms and carrots in place of the meat. I love eggplant, just not sure about it in this application.
