I used two number 3 iron skillets. Put a half pound ball of beef in one, placed the other on top, pressed as hard as a sophomore at prom, and presto, damn good patti. You're welcome.

I use two plates. The plates we normally eat off of have a perfect size ring around the bottom of the plate.
Turn plate over
Place ball in center of plate
Take another plate and press down
Perfect
Turn plate over
Place ball in center of plate

I think pressing them for me is more about my ocd coming out than anything else. All burgers exactly the same shape and size.

No one can see the shape and size once it's on the bun!

I try not to handle them much. Forming a ball seems to be a waste. I start making patty soon as I pick it up.

You making this patty cold or pressing it onto a hot skillet? The latter is my preffered method
