Maggianos would do well in NO especially during conventions., not so much in BR. They cater to large business crowds which is why you typically see them in larger markets.

No, that was Mamacita’s where BWW is now. BWW opened in 2002/2003

Not exactly. Maggiano's was started by Lettuce Entertain You, but the concept was sold to Brinker years ago. However, they kept ownership of the Chicago-area locations. But I don't think Brinker franchises them.
Also, the only other concept Brinker owns currently is Chili's, it's sold everything else off.
Lettuce Entertain You does indeed cluster... but they really only cluster in Chicago, LA, Vegas, and DC. Nothing anywhere in the south.
Also, Lettuce Entertain You is basically the northern version of Landry's Restaurant Group. A bunch of concepts, most of them suck but a few good ones, with a lot of clustering.

Can you name a couple of these?
Sysco is a distributor. They sell things, they don’t make them. They have products of different quality levels from local and super high end to economy products.
Most restaurants use a broad liner like SYSCo, PFG or US FoodService. Even the really high end ones for at least some of their supplies.
They may also use some local purveyors as well.
I’m not a big SYSCO fan because I think they’re a bully, but to say they don’t sell high quality products is completely in accurate.
Also, I was a major supplier to the Pappas Group in the past. They are a chain, but they make EVERYTHING from scratch including things like Tortillas, Salad Dressings, Burger Buns and even grind fresh angus shoulder chucks for their burgers.
Just setting a couple of things straight that you were completely incorrect about.

Exactly. You can get wagyu beef and foie gras from Sysco. Also small locally owned businesses generally get way more of their food product from Sysco than a national chain who have their own regional warehouses.

Pappasitos In the Houston area are pretty good to me. I naturally prefer Ninfas on Navigation and El Tienpo next door but Pappasitos has tasty cheese enchiladas, fajitas, grilled quail, etc. That Pappas Group has pretty damn good food but I’m not a fan of their BBQ place. That Pappas steakhouse is damn good. We aren’t talking a national chain here. I’m not sure how many Pappasitos there are but they are mainly in Houston, Dallas and Austin areas.
To my knowledge Pappasitos only has one restaurant outside of Texas and it’s in Atlanta. That place draws a huge crowd and so does the Pappadeaux’s Seafood next door.
I’d eat at Pappasitos once a week if Baton Rouge has one. Again it’s not as good as some of my favorites in Houston but it’s 100 times better than any other Mexican food in Baton Rouge. I don’t get all the complaints about the price either. That El Sombrero plate comes with a hearty sized enchilada and a real skirt steak soft taco with rice, beans, guacamole and all the other items to build a huge steak soft taco for $16 and I think the same dish is $12 for lunch. The enchiladas and shrimp diablo plate cost about the same. Where you get clipped is on mixed platters of beef, chicken, quail and shrimp but still the same it will feed 4 people.
