Made some Red Snapper Ceviche yesterday

2 dozen limes
1 purple onion
1 red bell pepper
1 yellow bell pepper
3 jalapenos (removed the seeds)
1 bunch of cilantro (didn't use all of it)
1 red snapper fillet
Splash of olive oil
Salt and pepper

Simple and perfect. Too many people try to over do it. When you have good fresh fish that recipe is all you need.

Pretty much the how ceviche is made at Sushi Yama, when I was there. Simple is the easiest way.
1 lime
1 cucumber
1/2 onion
some jalapeno
some cilantro
1 roma tomato
fresh fish and cooked shrimp
sea salt to taste

Damn I love ceviche. Pairs quite well with a cold beer. I made one last summer with redfish and added some watermelon.

Ive also made it with redfish. Not as good as snapper or grouper, but with the red snapper season lasting only a few days, it works in a pinch.

Looks good to me. I sometimes will sauté the vegetable for a few minutes in a little olive oil or butter, then refrigerate to cool before adding the fish. Just for a little change now and then.

Looks like a solid recipe though. I agree with your omission of tomatoes. I also like to add a little white vinegar.
Also for a change of pace I do one with pineapple or mangoes in it from time to time. Red snapper is the shite though. Perfect fish for ceviche IMO.

Looks beautiful. My husband doesn't fish, so I never have fish as fresh as that.

No one else commented, so I guess you're fine. I tend to focus on preparation so I notice shite other people probably don't. your technique on those veggies could be better, but I'm sure it tasted great. I figured people would harsh on you for the cuts so I tried to be funny with my comment, now I look like the a-hole.
