Made a brisket this week

Choice, 18 pounds pre trim. Didn't take much off. Salt & pepper in the fridge for 24 hours and some canned rub out of the pantry a couple hours before.
14 hours at 225, then another 6 at 250
Best brisket I've ever cooked. Sorry, I didn't take a bunch of pics like normal

What kind of smoker?

I can put enough charcoal in it to burn at 250 for several days. 48 hours is the longest I've been and burned through about half.

Your brisket looks delicious!

I cooked one this weekend as well. 15.85lb pre trim, prime. Seasoned with pink sea salt, cracked black pepper, brisket rub, red pepper, garlic
-Started off on open flame pit for 20min each side
-Cajun microwave 220 for 6hr, sprayed with apple juice after 6hrs
-When I went to bed I moved it from the microwave since it's harder to maintain temp without keeping fairly close eye, and wrapped with butcher paper and put in oven at 190 for 12hrs
-Wrapped entire pan and brisket in a beach towel to let sit for 1hr before cutting

I've cooked 6-7 briskets before, and this was by far the best one
