I like these Joseph's pitas. Good for making a pizza. I heat the bread a bit to firm it up before topping like a pizza and putting under the broiler.

Full of soy and they tell you to subtract the fiber.

LL, so sorry I missed this!
I don’t pre-bake the tortillas and they crisp up just fine. I usually use Mission Carb Balance whole wheat tortillas, but the regular is fine, too.
For shrimp I’ve been using a chimichurri sauce (Haven’s Kitchen Herby Chimichurri, which has zero carbs) that I spread very thinly. When not low carbing, I’ve used pesto as my first layer. For red sauce, I use Rao’s Pizza Sauce.
Next, shredded mozzarella, then shrimp that I’ve sautéed, but slightly underdone. The one pictured in my post also had a few pieces of sun-dried tomato, but add any combo of toppings you like.
Then into the oven at 350 for about ten minutes. I like to see that the edges of the tortilla are getting crisp, but that’s just my preference. I usually add red pepper flakes after it’s out of the oven.
Balsamic glaze sounds good! Occasionally, I add a few drops of extra virgin olive oil.

We use cauliflower thins from Trader Joe’s to make pizzas. If you crisp them up under the broiler before adding pizza toppings, the crust is tasty. I think 2 cauliflower thins have 5 carbs.

Why not subtract the fiber?
I used to think it was odd but your body doesnt digest fiber like other carbs.
