Correct, which is most of what's made and eaten in Louisiana.

Areas like the Midwest, Great Lakes, and Texas have a great deal more Czech, German, Polish, and other Euro settlers/communities. Great sausage making cultures that put out different but equally excellent quality sausage.

Bet y'all have killer bratwurst.

The issue with not having access to LA varietal sausage is if you're trying to make something like a gumbo, jambalaya, or RB&R...you really need that LA flavor to do the dish correctly.
