I bought a whole tenderloin from rouses the other day and was able to extract 7 various sized filets and I was consistent with my cutting. The loin was not uniform.
I also lost about 2 pounds to trimmings. I wish I would have just bought a family pack of filets.

Is there a good butcher near you...that's not in a grocery store?

If you know someone that has an account with Sysco, ask them to get you a case of the Buckhead fillets.

quote:yes. You'll yield about 12-14 1.5" ribeyes per rib loin and 8-10 8oz filets per tender loin.
