In the mood to cook some crawfish tonight but don't won't to go with the regular etouffee or bisque, what are some of your favorite crawfish go-to recipes? TIA

Crawfish Patties, make some stuffing, form it into patties, brown them in a little butter in the skillet and eat them on some fresh Evangeline or Bunny Bread.

Crawfish cardinale in puff pastry or over pasta. Look in the TD cookbook for the recipe. Rich but delicious. I like it just over French bread toasties, also.

Make a jambalaya with andouille sausage. Use seafood stock instead of water. As the water finishes boiling out and your jambalaya is ready, add the tails.
