Looking for a good chicken salad recipe.

I know Calvin’s in the holy grail but I’m not a fan of their pate consistency. I also don’t want fruit or nuts. Any old school recipes out there?

just smoke some chicken, chop it up to your preferred size, then hit it with the mayo, mustard, celery, green onion and season as you like it, and call it a day

Cut up a cup of the cooked chicken (we use Sam's rotisserie, but you can cook your own in the oven or boiling) diced to the siz you like. Chill or do it warm, to your liking To that add 1/4 cup of diced celery and 1/4 cup of either diced dill pickles or diced sweet pickles and 1/4 cup of your brand of Mayo. Mix well and chill if you like, or eat it immediately.

Chicken salad is very forgiving. Chopped up rotisserie chicken is what I use.

Lacombe chicken salad from the D.H. Holmes cookbook (From "Bayou Banquet")

Makes 4 servings

4 to 5 cups cooked chicken, cut in large pieces
2 stalks celery, coarsely chopped
2 green onions, finely chopped
1 tablespoon parsley
1 apple, peeled and finely chopped
1/2 cup mayonnaise (homemade, recipe follows)
1 teaspoon good curry powder
Salt and black pepper to taste
Lemon juice

Combine chicken in a bowl with celery, onions, parsley and apple. Toss gently.

In a mixing cup, combine mayonnaise and the curry powder and blend well. Pour over
salad and toss. Salt and pepper and add lemon juice to taste. Toss again, chill and
serve over lettuce.


Bayou country mayonnaise (From "Bayou Banquet")

Makes about 1 1/4 cups
1 egg
Juice of 1 lemon
Dash of Tabasco
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon Creole mustard
3/4 cup Wesson oil, combined with
1/4 cup olive oil

Have all ingredients at room temperature.

Place egg, lemon juice, Tabasco, salt, pepper and mustard in the blender, along
with 1/4 cup of the oil. Blend on high speed for 30 seconds.

Reduce speed to low and pour remaining oil into center in a very thin continuous
stream. Blend thoroughly.

want something really simple that I did in college:

mayo, sour cream and buffalo sauce, blue cheese crumbles, celery (chopped carrots if you want to) + diced/shredded chicken

I make one frequently like my grandmother did.

Green onions -4 (I like a good many.)
Tuna-1 can (I prefer Wild Planet Albacore)
Dill pickles- the equivalent of 1 large
Mayo-to your taste
Celery-2 ribs

ETA: 2 hard boiled eggs chopped.
Black pepper to taste.

Chop the onions, pickles and celery. Flake the tuna and mix that together with chopped ingredients. Toss with mayo until you get the consistency you like. ETA: Add the hard boiled eggs here. I only add salt after mixing if it needs it which usually isn't the case due to the pickles and mayo. You can vary the amounts as you like. It's really simple, but very good.

Either someone on here or some article on google suggested to add dry ranch mix. I tried it and it's worth adding in my opinion.

As others stated, keep it simple, add what you want.

Chopped rotisserie chicken, mayo, mustard, salt, pepper, garlic powder, onion, celery are the basics. Add what you want from there.

I like chopped boiled eggs in my chicken salad.

My co-worker makes one with Italian dressing instead of mayo. I like it a lot because it's different but I make one more traditional.

Chicken
Mayonnaise
A touch of mustard
Chopped onion and celery (inner pale stalks or peeled outer stalks)
Garlic
Boiled eggs (chopped whites, yolks mixed in to dressing)

I understand no offense was intended, but I assume you don't know that Gris Gris is a nice lady and not a just a guy like so many of us are.

If you want something real non-traditional, use cream cheese instead of Mayo. Depending on how much chicken, you may still need a little Mayo to thin it out, but it’s the only way I make it

Chicken
Cream cheese
Egg (I grate mine for a finer texture)
Dill pickle
Celery
Shot of creole/Dijon mustard
Salt/pepper
Touch of celery salt

was giving the gender neutral 'guy' a hard time for giving a chicken salad recipe with tuna, all in good fun

I have no idea why I posted the tuna salad recipe. I was thinking chicken, but posted tuna. I will blame it on being sick which apparently affected my brain as well.

However, many times, I make a quick chicken salad the same way. Sub the tuna for about 3/4 cup of cooked chicken and enjoy!

Well, dammit, I forgot to put those in the tuna salad recipe which can be used for chicken salad. I need to edit.
