Littleneck Clam Spaghetti & Boiled Lobster

Going to boil a couple lobsters this evening. I have a 1.75 lb and a 3 lb monster.
Going to throw some thyme, oregano, parsley & garlic into a pot of salted water and bring to a boil. Dip the lobsters in and let’s boil for 9/10 minutes. Remove and immediately dunk into a vat of chilled water to stop the cooking process. Let them cool for 5 minutes and start breaking open.
Serving with clarified butter and a side of littleneck clam spaghetti tossed with olives oil, garlic, Parmesan and parsley.
Any tips on the lobster? The above method was what I did last time and they came out great. Will post pics later.

So you run through your method for boiling lobster, say that's how you're going to do it, then ask if anyone has advice on how to boil lobster?

I always thought lobster is typically steamed rather than boiled. How does boiling change the taste?

I'd argue that broiling lobster gives the deepest flavor.
If you want the most suçculent, then sous vide is best.

Boiling was the first method I used and they came out better than those I’ve had in restaurants. I’m sure steaming would produce same results.

They don't absorb any of that seasoning in the water.

Anybody want to bump the thread about the guy selling lobsters for a discounted price on TD that he had stolen from his job? (Or something along those lines)

You boil or steam lobster until it’s bright red. That’s when it’s done. Not some arbitrary time in minutes.

They were all cracked at a minimum but you’re right, some needed more time. Next time I’ll use a larger sauté pan.
