Let's throw together a quick 'lil Jambalaya

Ready...
Bout
2/bs of boneless chicken thighs
1/lb of either Andouille or smoked sausage
A little shot of smoked Tasso
Couple cups of your chopped Trinity
And your favorite seasonings
Brown down that chicken with some olive oil and lots of your favorite seasonings on it and set aside.
Cut up that sausage and brown down in the same pot then set set aside.
In the same pot put a half a stick of butter and deglaze the fond with Baja Blast Mountain Dew ;)
Once your onions are translucent, put how ever much of your favorite kind of garlic you want in the pot to help fight off the vampires. Since the vampires are bad in these parts I used A LOT of (roasted) garlic
Now you're ready to marry all this together.
I used 3 cups of rice and 5 1/2 cups of chicken stock in this pot.
Now I will say I did stir in better than bouillon roasted veggies version while bringing this to a boil.
Stir while bringing to a boil. Boil for about 5 or 10 minutes while stirring.
Then cut your fire off and put the lid on and do not touch for at least 45 minutes!!

Made this last night but substituted brown rice fusili for the white rice. Was darn good. used Best Stop cajun grillers which are dynamite.

Looks awesome baw.
I love cooking jambalaya. It's one of the most enjoyable meals to make...don't know why. That, and making a roux just makes me super happy.
