Let’s talk about Pot Liquor.

No, i’m Not talking about marijuana infused booze (although i’ve Heard worse ideas).


I’m talking about that magical liquid you get when you cool down greens or green beans.

I will sit there and make a pot of greens just to sip on that invigorating broth, that reduction that is filled with all the goodness of the veggies. That goes down easy, clears the sinuses, heals the soul and repairs the body.

It’s almost a magic potion, capturing all the minerals and vitamins that leech out during the cooking process. And the flavor... man oh man. You throw a little salt pork and bouillon in there with your greens and you’ll be drinking a little draught of heaven.

Anyone else love pot liquor? Any other ways you make it?

Can honestly say I have never drank the leftover liquid.

I usually don't make my beans with a ton of leftover liquid though.

Love it. I cook greens with smoked turkey wings and some onion, and plenty of salt. Jalapeño juice in the bowl.

What potlikker can’t be sopped up with cornbread gets drunk from the bowl.

My grandmother would always have a coffee cup with the pot liquor next to my granddaddy's plate when she would cook turnip greens. He would sip on it with his corn bread and pork chops. I thought it was kind of odd when I was a kid, but now it all makes sense.

Going to have to think about this next time. Like I said, usually I dont have leftover liquid so might have to make adjustments.

Much of the time, I make a stock with some smoked hocks and chicken stock prior to adding that to the greens. Gives me a good bit of pot liquor. I'm addicted to the stuff.

Use it to make a porridge or a risotto. Then add the shredded pork hocks and a soft boiled egg on top. Try barley or Farro as the grain. Or steel cut oats.

that's a good recipe.. some people put all kinds of herbs and bay leaf in the mix that are really unnecessary.

This is the real deal.. I make it with Tabasco heritage peppers or bird's eye. Awesome on meat rice and gravy, okra, gumbo, stew.. everything.
