Let's talk about Balsamic Vinegar

I love this stuff but usually pick a random bottle off the shelf at the store depending on price. I've seen them range anywhere from about $3 to $30 where I shop.

What's the difference? Taste?

Basically the older it is the more reduced it is. Much more concentrated therefore you use less. Only buy balsamic from Modena.

I don't like it at all and I like apple cider and red wine vinegars. What am I doing wrong?

The age is first to consider and the flavor it provides along with the source of the grapes that are used to make it from the wine.

Love to reduce it and drizzle it over roasted garlic and olive oil on crusty bread. Use it in my Caesar dressing also.

Balsamic vinegar drizzled over some good vanilla ice cream with sliced berries.
