Grilled redfish off the shell, , grilled bacon jalapeño cream cheese stuffed shrimp, shrimp and corn bisque , hogs head cheese and boudin apps.

Thinking about picking up Popeyes and then making a Nashville hot chicken oil to dunk it in. Could be genius but I'm sure my stomach will hate me for it.

On the XL BGE:
3 racks of St. Louis style
3 packs of deer sausage
2 packs of pork boudin

On the big easy greaseless fryer
20lb turkey

And 24 10oz Bud Lights marinating in ice water right now

Yeah that looks great and I'm sure taste great but I'm not breaking out the torch to get a good sear.

For a meringue sure but not my piece of meat. If I can't just throw it on the grill, cast iron skillet or flattop and cook it like I want it-a very medium rare, I'm just going to have a bowl of Cheerios.

I don't cook for a restaurant-I don't need to do much different than I have for 50 years.
