Leftover boiled crawfish

What to do with leftover boiled crawfish? Got couple leftover lbs. etoufee? Anything else? Also any recipes would be super helpful.

Of that thread, I’d say the omelet first, then the crawfish patty’s and then a new one would be a flash fried poboy.

I make a crawfish boil soup using all of the leftover crawfish, sausage, onions, potatoes, mushrooms, etc. It's awesome.

Cold in nice crisp salad greens, hard boiled egg, bacon, red onion, maybe some shredded cheese.

Crawfish Monica.

A few recipes floating around, but the main bit:
Green onions sauteed in butter. I also add minced garlic and shallots.
Add tail meat and cajun seasonings. (My old man swears by Emeril's Essence seasoning for this. I could take it or leave it.)
Add half&half and more seasonings as need be. Melt in some shredded parmesan and parsley to finish. Serve over pasta (I go with Rotini).

That sounds great. And next time we do a boil at the house, that’s what I’ll do.

Most of the time I just reheat in some hot water and have boiled crawfish again.

It's usually about 50% of the time this, 25% of the time etouffee, and 25% of the time just eat the tails (sometimes as a sandwich).

The latter is the easiest option which makes me wonder why we don't do that most often

Unfortunately, I never have any leftover crawfish because if you put them in front of me, I'll eat every last one of them.

They are better the next day right out of the fridge. It doesnt need to be heated.
