Mrs. Who floured some left over tails Friday and flash fried them for some tasty crawfish poboys.
She usually likes to make hash browns with the leftover potatoes but she sliced em up and made some wafer fries to go with the poboys. Still got a bunch of corn.
What ya got?

Omlettes are always good with some green onions and cheese

Make a blond roux and cook some onions and garlic in it. Add some chicken stock. Add some heavy cream. Peel and smash your crawfish taters with a fork, add to pot. Cut your corn off the cob and add to pot. If you have some leftover carrots or mushrooms from the boil, cut those up and add to the pot. Let this come into its own for 30 minutes or so. Add the crawfish tails. Give it another 10 minutes then tear into it.

Bisque!! Clean the heads very good, stuff them wih a stuffing of tails with the trinity and bread crumbs, then fry the heads. Bisque with chopped tails a la etouffee for the liquid.

In a bowl mix crawfish tails, chopped celery, salt, lemon juice and cubed potatoes from the boil. Spoon mixture into a buttered bun for a bad arse crawfish roll.
