LeBlanc's Seasoning in Jambalaya

I've been told, if you follow the 8 ounces per 5lbs of rice ratio, you don't need any other seasoning...my question, for those that use this, do you use chicken broth/bouillon or just plain water?

I use LeBlanc's only. I do not have any pre-measured amount that I add to any particular sized jamb. I use as needed for taste keeping in mind who i'm cooking the food for. I also always use chicken broth. Home made is preferred but I do use canned if that all I have. Keep in mind chicken broth has salt/seasonings as well. Some more than others depending on brand if store bought.

LeBlanc's is good but you will still need garlic. Its light on garlic.

Never go off of someone else's supposed seasoning suggestion. You can use it as a guideline if you choose, but always taste your food and season accordingly. Personally, I use one called blanchards that I like more than any of the others. I only season the meat with it for the most part. Salt, pepper, garlic powder, cayenne etc is how I season the gravy/broth. Every batch is different.

That being said I hate using recipes for stuff. Just roll with it for the most part.... It's how I learned to cook in ol Acadia parish.

Per Kim LeBlanc -Use water not stock or broth, he states that the stock adds too much salt that is already accounted for in the seasoning, now if you made your own and used no salt???

kim does not add garlic but does add about a 1/2 small bottle of hot sauce (LA)for 5 pounds of rice

I got some at Murray's Superette in St Amant. I think Triple S Grocery & Deli nearby has it, too. I made an extra trip on one of my LaPlace andouille runs.

I'd like to know which place closest to NOLA has it.

I imagine so. From what I saw on TV, St Amant was hit pretty hard.

Got real close but he stayed dry

Most of the smaller grocery stores in ascension carry his stuff, he is working with Rouses and hopes to be in all of their stores soon, ask for it and it would help. Not sure where the closest to NOLA is, I will ask him tomorrow. alexanders market on highland by the interstate carries the full line.

Alexander's in BR carries it. The LeBlanc's in Zachary and Drusilla used to have it, not sure since Rouses

Plain water. The stuff is perfect. If you're using broth, stick with the Leblanc's no salt

not for Jambalaya, his no salt blend is a complete different animal

Both, kind of a long story, Kim Leblanc won the world championship jambalaya festival and wanted to make a seasoning blend for the perfect Jambalaya, he did so at the ratios mentioned above, he and everybody else realized that it was also a great "creole seasoning blend" that can be used like Tony's etc so that is how it is marketed.


he also has a spicy blend, a no salt seasoning, a bar b q rub, and gunz and roses bar b q seasoning, chicken and fish fry mixes, boiling seasoning, etc

he also sells seasoning in bulk for a variety of uses
