Latest Cast Iron I found

I picked this broiler pan up last week. It was in pretty bad shape and I cleaned it and have had it in the oven three times now with a little oil, and am not happy with working forward from the condition I bought (very rusty with big nasty burnt/crusty places), so I may burn it bare and go from that point to properly season it.
But ain't it cool! There are just two of us at our house and this baby will be the perfect size for two pork chops, or a single steak. We hardly ever cook two steaks now - just too much to eat.

It's really old, which means it is just hitting the prime of it's life. At least it's not solid rust anymore.

what was your process of cleaning it up?
I have a larger pot that isn't quite rusted up bad, but it's got some light orange areas all over on the inside. I've never cleaned up a cast iron pot before.

I will use this one to roast beef, cook porkchops and beef under the broiler, braise fish, roast beets, asparagus, peppers, squash whatever. Lots of stuff. I have a much larger Calphalon that I use a lot. This one is smaller and will work just fine for the two of us.

I don’t give a shite what people say, you certainly can use dish detergent to clean them. Just don’t go crazy scrubbing.

I just scrub thoroughly with a scouring pad under running water. when the rust stops washing away, it is ready to dry wipe down lightly with the first oil application and begin seasoning in the oven 350 F for 30 minutes, then wipe away any excess oil and go again.

Within minutes of putting the iron in 50/50 vingear and water, you will see a chemical reaction taking place.
I warn people not to leave it too long cause it will eat into the pot if left long enough. I find 6-8 hrs is plenty.

I like to put them in a good fire and just let everything burn off when they are like that and just build up from there.
I burned a big old brush pile a few months ago before the burn ban which I knew was coming and a friend brought 6 pieces and tossed them in. Fire burned for a week and I just kept pushing it up with the tractor pans and stumps. He came back and pulled them out and they were clean and smooth as a baby’s butt.

If you have a wood burning fireplace or outdoor wood pit build a fire and place it in once the hot coals start to form. Let it sit in the coals for a couple hours. All residue will burn off.
Take it out. Let it cool. Rinse off and immediately season with oil in an oven as you would do with any new unseasoned cast iron cooking utensil. It will be as good as new.
You can’t scour or soap away residue accumulated on cast iron.

A lye bath followed by a quick vinegar soak is the way to go.

Our electric oven has a deep self-clean setting. It will also burn everything away, right down to iron colored bare surface.
Takes 4 hours and then a while for the kitchen to cool off.

This is what people I know in Laffite do as a group. They build a big fire then everyone throws their cast iron pans in.

You might want to wait on thanksgiving before heating the kitchen that hot.
I have a 30 gallon sugar kettle and a 15 gallon jambalaya pot and I just let them burn in a couple fires and they came out great.
