Delmonico's at the Venetian (little pricey, but good for a nice dinner)....try the buffet at the Wynn for lunch (best buffet on the strip, IMO)...if you fancy a bet on sports, Caesar's Palace is THE sports book.

Went for a quick in and out trip for the New Years Bowls games and stayed at the Palms. Ate at N9ne steakhouse the only night I was there and it was great. Litterally cut my steak with a fork. I just put it on the room and it was comped so Im not sure about the cost but I'm sure you can find the menu online.

There is a restaurant at Paris at the base of the tower, can't remember the name but it is excellent...bit pricey.

The only nice restaurant I ate at in town was Emerils at the MGM. It was great and I couldn't believe that there were two other places there that were alot more expensive.
When you get in town ask her concierge for some suggestions for places that might be off the strip and you will get a much better value.

Some that I really liked:

Spago - for lunch (ceasers)
The Pink Taco - for lunch (hardrock)
The Chinese place in the Wynn
I really liked Stack (MGM or Mirage, cant remember)

BOA Steakhouse for a nice dinner/ Bobby Flay's Mesa Grill for brunch (both at Ceasar's)

There is also a great Brazilian Steakhouse at the Mirage; can't think of the name.

Spago for lunch is a good idea as someone mentioned. My wife and I have been a couple times in the last couple years. And I don;t remember it being expensive at all. In fact I remember it being a very good meal for a good price at lunch.

Yeah, it's my wife's favorite place. We usually eat there at least twice a trip.

Del Frisco's is great for steak. The manager, Kim Owens, is from Louisiana and always treats LA people great.

I'd also recommend Nobu and Okada (at the Wynn) if you're in the mood for Asian cuisine. Had great meals at both.

I went to Red Square for dinner in November and it was delicious. The martinis are even better...

Samba

IMO it's ok, but I think they have a lot better places in Vegas to eat.

Venture off the Strip and go to Firefly, just north of Hard Rock on Paradise next to Ruth's Chris. The best tapas restaurant I've ever been to (anywhere), and their white sangria is a MUST.
