Kombucha time

I randomly tried this stuff, and for some reason I actually enjoyed the taste of it. And I'm developing a real DIY problem and I like ""science," so I decided to try making my own.

I am making my own SCOBY right now.

anybody tried this and enjoyed it?

Never made my own.

When I drink it, I feel ill for a little while. Then I'm actually ill for a little while.

Then I'm better.

Yeah it tastes a little like some of my h.s football teammates gear smelled at first, but there is something good about it, which is weird a.f.

It's got a sweet after taste.

Bitter up front. I have one a week or so. Haven't had one in a while though. I know it's good for your gut.

I've tried it twice and both times almost liked it. I felt like it needed to be colder or something.

Buddha's brew is pretty good. I find you need a sweet flavor to cover the fermented taste.

Just like sour beer, the final taste will depend on the mix of microbes and exposure to oxygen. I've had really acetic (vinegar) kombucha that is borderline horrid, but I've also had some really complex and fruity kombucha when no fruit was added. I've been meaning to try some test batches with some of my mixed cultures to see what I can come up with. I'd like to keep some on tap as a low-alcohol alternative drink.

I started some the other day. I figure if I can brew beer and brew sour beer that I should be able to handle something that middle aged house wives can apparently make well at home. We shall see.

I'm not into kombucha, but I am fascinated with fermentation. If you want to geek out on all things microbial, get your hands on Sandor Katz "The Art of Fermentation". He covers kombucha and everything else under the sun from vinegar and yogurt to kimchee and ginger beer, kefir, etc.
